I am Vidushi Sharma, a research scholar at the IITB Monash Research academy, with a profound academic background rooted in the field of science. After completing post-graduation with biotechnology as my major, I embarked on an exciting journey in the corporate world, working at Aurigene Pharmaceuticals, a subsidiary company of Dr Reddy’s. My passion for research and scientific exploration eventually led me to make a pivotal career change, leaving the corporate world behind to pursue my PhD. My project is aligned with the theme of health sciences where I study the interaction of dietary fibre and polyphenols with digestive enzymes under the supervision of Dr Nand Kishore (IIT Bombay main supervisor), Dr Sushil Dhital (Monash University main supervisor) and Dr Lavraj Devkota (Monash Co-supervisor). The expected outcome of my research is to form a cornerstone to engineer high value foods that improve health through digestion control, reducing the risk of non-communicable diseases such as diabetes. This journey is not just a professional pursuit but also a deeply personal one, inspired by the quest to make a meaningful impact in the realm of health and nutrition.
